Blumenthal’s famous Christmas dinner

I just love this video and had to share it with everyone. It was in the hour-long 2007 BBC special Heston Blumenthal’s Perfect Christmas, Blumenthal reimagines a Christmas dinner but with his own modernized approach. The menu includes a dish made from gold, frankincense, and myrrh; a flaming sorbet that doesn’t melt; a sous-vide confit smoked goose breast with chestnut veloute, chestnut smoke, and a goose skin cracker; and for dessert: a mince meat brioche french toast, crystallized bacon, and a liquid nitrogen-scrambled reindeer-milk ice cream. The video offers a fantastic behind-the-scenes look at his thinking and techniques. If the video does not appear please click here video
